Chef Gills Winter Warmer Soup
Tin of chopped tomatoes
Bag of baby leaf spinach
Handful of basil leaves
2 cups of yellow split peas, cleaned and drained.
1 clove of garlic
A pint and a half of vegetable stock
– Sauté the onion and garlic in a hot pan.
– Add tomatoes, basil, and spinach leaves to the mixture.
– Add stock and split peas and simmer for 40 minutes on a medium heat.
– Blitz the ingredients in a pot using a hand blender. Alternatively you can use a food processor to blend.
– Serve warm & enjoy!
This soup is chock full of goodness, containing Vitamin B6, Vitamins A and C, Protein, Iron and Magnesium. It is a highly nutritious dish for all the family and the perfect lunch on a cold winter’s day.
